Popeye’s Soup

Ingredients:

  • 3/4 c. minced ham
  • 2 cloves garlic, minced
  • 3 Tbs. oil
  • 1 c. tomatoes, peeled and cubed
  • 2 c. chopped spinach
  • 1/2 tsp. nutmeg
  • 4 c. chicken broth
  • 1/2 c. uncooked macaroni

Directions:

  • Sauté ham and garlic in large saucepan with oil. Add tomatoes, spinach, nutmeg and chicken broth; cover and simmer for 20 minutes.
  • Add macaroni and continue cooking for 15 minutes until macaroni is tender.

Serves 4.
